19th fia fia cooking--Braised Lady's Finger with Pork (23/05/2012)

TODAY SPECIAL: Braised Lady’s Finger  (6-8 Servings)

RECIPE                              PLACE: TUVALU PRISON

Ingredient
Condiment
150g Okra
Salt
200g Pork
Black pepper
1 onion
Sugar
5 cloves of garlic
Tomato sauce
2 tomatoes
 (or 1 carrot)
Soy oil or butter
2-3 limes

         DIRECTION:

1.     Mince the pork, and marinate with some garlic, 1 teaspoon of black pepper, 1 teaspoon of sugar, and 2 teaspoons of salt for 20-30 minutes.
2.     Wash and cut the stalks of okras.
3.     Peel the onion and garlic, and chop them finely.
4.     Cut the tomatoes into medium size. (If you don’t have tomatoes, use the carrot instead of tomatoes.)
5.     Squeeze the lime or lemon juice.
6.     Make the sauce: 1 teaspoon of salt, 3 teaspoons of sugar, 3 tablespoons of tomato sauce, 2 tablespoons of lime juice. (The quantity of seasoning could depend on you.)
7.     Use the soy oil or butter to stir-fry the garlic and onion for a while.
8.     Put the minced pork into the wok stir-fry for a while.
9.     Add the tomato or the carrot into the wok, and keep stir-fry till they become soft.
10. Put the okras into the wok and pour the sauce in, sprinkle some black pepper, and stew over high heat till the sauce becomes dryer.
