21st fia fia cooking--[North Island~Nanumea] Sweet and Sour Chicken (26/05/2012)

           TODAY SPECIAL: Sweet and Sour Chicken (10 Servings)

           RECIPE:                                          

 

Ingredient
Condiment
4 sweet pepper
Salt
5 chicken legs (quarter)
Sugar
2 onions
Tomato sauce
3 cloves of garlic
Soy sauce
1 chili
Vinegar
1 egg
Flour

Baking powder




























   DIRECTION:

1.     Peel and bone the chicken legs.
2.     Cut the chicken into medium size, and marinate with 1 teaspoons of soy sauce, 1 clove of garlic (chop finely), 0.5 teaspoon of salt, and some sugar for 20 minutes.
3.     Cut the sweet pepper into half, remove the seeds, and cut it into medium size (similar with chicken).
4.     Cut the onion into medium size.
5.     Slice the garlic and chili.
6.     Mix 3 tablespoons of flour, some salt, 1 egg, and 2 tablespoons of water to be the paste.

1.     Dip the chicken into the paste and deep-fry it with hot oil till becoming golden brown. (The temperature of the oil is about 180˚C.)
2.     Stir-Fry the garlic and chili for a while, then put the onion into the wok, and add the sweet pepper into the wok, and put the fried chicken into the wok when the pepper and onion are half-cooked.
3.     Add 5 tablespoons of tomato sauce, 1 tablespoon of sugar, and 2 tablespoons of vinegar to taste. (The quantity of seasoning depends on you.)



        Additional dish: Cucumber Salad

2 cucumbers
Salt
3 cloves of garlic
Sugar
1 chili
Vinegar

Soy sauce





 

  Direction

1.     Peel the skin and remove the seeds of cucumbers.

2.     Slice the cucumber into medium size.

3.     Marinate the cucumbers with some salt for 10-15 minutes.

4.     Chop the garlic finely.

5.     Slice the chili.

6.     Squeeze the cucumber, and mix with garlic, chili, soy sauce, sugar, and vinegar to taste.






 

      Additional dish: Stir-Fry Cabbage  (10 servings)

       Recipe  

        Ingredients : 5 Cabbages5 cloves of garlic

        Condiments : SaltSugarFrying oil

        Direction

1.     Wash the cabbages and cut them into medium size sections.

2.     Slice the garlic.

3.     Stir-fry the garlic, and then put the stem of cabbage into the wok, and add the leaves of cabbage when the stems are half-cooked.

4.     Add some salt and sugar to taste.
