TODAY SPECIAL: Taro Soup (5-8 Servings)

DIRECTION:
1.
Peel
the taro, and cut into chunks.
2.
Cut the
pork into strips, and marinate with 3 teaspoons of soy sauce, 1 teaspoon of
black pepper, corn flour, and some sugar for 20 minutes.

Soak the
mushrooms into water for 15 minutes, and soak the bean noodles into water till
becoming soft.
4.
Chop the
garlic finely, cut the spring onion into sections, and cut the carrot and
mushrooms into strips.
5.
Stir-fry
the taro with hot oil till becoming a little bit golden brown. (The taros have
to soak in the hot oil 80%, and the temperature of the oil about 180˚C.)
6.
Boil the
broth. (Use the rice cooker to steam the chicken bones for 2 hours in advance.)
7.
Stir-fry
the pork for a while, and add the garlic, mushrooms, and the stem of the
spring onion, then add some soy sauce, put the taros into the wok,
and pour the broth in.
8.
Boil the
soup for 5-10 minutes, pour the bean noodles in, and add salt, sugar, and white
pepper to taste.
9.
Add the leaves
of spring onion before serving.
