2ed fia fia cooking--Spring Onion Pancake (2012/01/20)


          Spring Onion Pancake

           RECIPE

Ingredients
Quantity
Spring onion
15
Flour
3 cups
Water
Hot 1 cup
cold ½ cup 


Condiment
Quantity
Salt
10 teaspoons
White pepper
4 teaspoons
Black pepper
4 teaspoons
Sesame oil
20 teaspoons

    DIRECTION:

1.    Sift the plain flour.
2.    Add 2 teaspoons of salt in the flour and blend it.
3.    Pour 1 cup of hot water (about 80°C) and stir the flour into the flakes at the same time.
4.    Add ½ cup of cool water into the bowl and join the pastry.
5.    Knead the dough about 5-10 minutes.
6.    Spread the sesame oil on the surface of dough and wait for 30 minutes. (awake the dough: to make the dough easier to shape)
7.    Finely chop the spring onions.
8.    Sprinkle the salt and the black pepper on the chopped spring onions and mix them.
9.    Cut the pastry into 10 pieces.
10. Use the rolling pin to make a flat and oval pastry.  
11. After sprinkling some salt on the pastry, put the chopped spring onions on the pastry and fold the dough.
12. Roll up the stripe of pastry.
13. Press the circular pastry and flatten it with rolling pin.
14. Fry the pastry in the pan for 5-10 minutes with small flame.
15. TASTING TIME (dip soya sauce / sprinkle some white pepper/ with sliced pork or vegetable)
